Our history

These are the legendary “anni ruggenti”, the fabulous 60s when Versilia was at its peak, the holidays and economic boom capital; the best of Italian and international music scene, Mina, Chet Baker, Ella Fitzgerald animated the nights of the Bussola in Focette and of the Capannina di Franceschi in Forte dei Marmi. Viareggio, at the time the "pearl of Versilia", was the most glamorous place and the heart of this whirl, while Forte was the summer "good retreat" of the rich élite who would rather prefer privacy to public appearances and enjoyed the hot summer days in the gardens of their villas.

Within this context "grandma", Nelia Biagi, opened one of the first wine bars in the center of the village, in via Montauti, theTre Stelle”: wine, fried and marinated anchovies... the seed of the business had been planted, and it already contained, in its simplicity, what will always remain the soul of their restaurants, a cuisine strongly connected to the history, tradition and products of their territory and a particular attention to hospitality and the quality of service.

Nelia's daughter, Nadia Viacavastarted soon to help her mother out in the kitchen and together they began to introduce some first courses and other gastronomic proposals to please the ever-growing clientele,simple dishes of the Versilian tradition, and the wine bar turns into the “trattoria Tre Stelle”.

But the real story begins in the early 70s when Piero Vaiani,from the countryside around Lucca arrived in Versilia and meet Nadia, they fell in love and started sharing their life and work, creating a partnership based on love, passion and professionalism that projected them towards goals always more ambitious and stimulating.
A few steps away from the "Tre Stelle" in 1986 the Vaiani family created the restaurant"Bocconcino"a place conceived and developed for a younger and more casual target, anticipating and responding to a kind of tourism in Versilia that was changing. This ability to anticipate the tastes and needs of customers in order to satisfy them in the best possible way will soon become a distinguishing mark of all their restaurants.

In the nineties David and Marco entered the family business, continuing with great commitment, passion and competence the path traced in the seventies by their parents, a path dedicated to fine dining and high-level hospitality.
In their growth and maturation path David and Marco have gotten Nadia's sensitivity and affability and Piero's tenacity and desire for innovation, knowing then how to surround themselves with highly motivated young professionals to collaborate with, that within few years have become the people with whom to plan the present and future of their restaurants.
The constant desire for change, to stand out and offer an always better dining experience the Vaiani family to the Bistrot in the nineties,marking a fundamental turning point for their journey: the cooking style was refined, the restaurant renovated and the welcoming improved, placing within few years the Bistrot among the best places in Tuscany,consecrated by the award Michelin Star..

The Vaiani family goals are certainly not satisfied by this prestigious recognition, which indeed becomes a stimulus for new challenges; in 1992 they acquired the farm in San Quirico di Moriano, the lands of Piero then, after selling the “Tre Stelle” and “Bocconcino”, in 1998 they opened the "Osteria del Mare”, a restaurant characterized by traditional dishes interpreted in a contemporary way;

In 2008 it was the turn of "The Fratellini’s" offering fusion cuisine, sushi and experimental dishes, in 2015 the "Pesce Baracca" was born, an innovative format that ranges from gastronomy, fish market, restaurant and street food, up to 2017 when the gastronomic concept behind the “Pesce Terrazza". The Vaiani family now manages five restaurants, each with its own specificities that differentiate it from the others, with the intention to satisfy at their best the different tastes of their guests. Lined up along the shoreline of Forte dei Marmi, where the built town dissolves giving way to the infinite horizon of the sea, as the maritime lighthouses of the past they have become an important reference point for the territory, ... for the present but especially for the future, because as Jim Morrison said "dreams are like stars, just look up and they are always there."i sogni sono come le stelle, basta alzare gli occhi e sono sempre là.”
